Baked Shrimp Scampi Recipe
Preheat oven to 450º
Use these ingredients from Basic Recipe: 1 ½ to 2 pounds medium to large shrimp, peeled, but with tails on; four tablespoons unsalted butter; four garlic cloves; minced, ½ teaspoon salt; chopped, ¼ cup parsley, chopped; pepper to taste; ¼ cup vermouth or dry white wine, plus 1/4 cup olive oil.
Melt the butter, combine butter, oil, wine or vermouth, chopped garlic and salt and pepper in a bowl. Toss with shrimp, set aside for a half-hour. Remove shrimp from bowl and place in a single layer in a baking dish. Pour the butter mixture over the shrimp, bake for 15 to 20 minutes (until sauce bubbles). Sprinkle with parsley and serve.
Barbecue Shrimp Scampi
Marinate shrimp as in Baked Version above, place shrimp on skewers and grill on a barbecue, two minutes per side. Brush marinade onto shrimp as they cook.
Note for Barbeque Recipe: If using wood skewers, soak in water for 20 minutes before use.
Garlic Shrimp Scampi
Use Basic Recipe, but double the amount of garlic cloves.
Olive Oil Version
Use Basic Recipe. Replace butter with ½ cup olive oil.
California Shrimp Scampi
Use Basic Recipe. Chop up one tablespoon sage or marjoram and add to skillet with shrimp.
Hot and Spicy Version
Use Basic Recipe. Add either ½ to 1 teaspoon pepper flakes, ¼ teaspoon cayenne or 1 tablespoon Worcestershire sauce.
Mexican Shrimp Scampi
Use Basic Recipe. Replace parsley with cilantro.
Veggie Version
Use Basic Recipe. Dice two red bell peppers, 1 cup button mushrooms and sauté with shrimp.
Note: larger diced veggies work well on skewers with barbecued shrimp.
Creamy Shrimp Scampi
Use Easy Shrimp Scampi Recipe. Add ¼ cup whipping cream or half and half as shrimp is sautéing. For added richness, sprinkle with freshly grated Parmigiano-Reggiano.
