The Internet is loaded with lobster sauce and spread recipes, it's more popular than you might imagine! Here's a very basic version. For variations, try adding in some capers, a little more horseradish, even some green onions for color. The important thing to remember is to add an ingredient or two that gives it a little bit of an "edge" while still letting the lobster flavor shine through.
2 cups cooked lobster meat, in chunks
1 Tablespoon lemon juice
2 Tablespoons shallots, minced
½ Tablespoon horseradish paste
¼ cup parsley, minced
½ cup mayonnaise
In a bowl, combine lobster, lemon juice, shallots, horseradish and parsley. Add mayonnaise until bound together. Serve on crackers or in grilled mushroom caps.
