Fried shrimp recipe: Yummm... Do you love panko flakes as much as us? We use it for fried chicken as often as shrimp.
These flaky, Japanese bread crumbs have shortening added, which is why they fry up so light and crispy. We buy it in the Asian section of our local supermarket and base our recipe on the simple instructions on the back of the package.
Try them with butterflied shrimp (shrimp sliced lengthwise down the back) and for extra kick marinate the shrimp in teriyaki sauce or some other marinade.
Note: we're hardly experts on deep frying, so our recipes are skillet recipes.
Recipes
Fried Shrimp with Japanese Panko Flakes
1 ½ to 2 pounds medium or large shrimp (medium: 35 to 40 per pound, large: 12 to 15 per pound)
½ cup panko flakes
1 egg
¼ teaspoon salt
2 to 3 tablespoons water or milk
Prepare a plate, baking pan or pie tin with paper towels before cooking, to place shrimp in after you remove them from the frying pan.
To cook, over a medium heat, pour about ¼ cup cooking oil into a skillet. When ripples start to form in oil, it is ready for cooking.
In a bowl, mix panko flakes, egg, salt and water or milk. Dip shrimp into mixture and place in frying pan. Space at least one inch between each shrimp. After one minute flip to other side, cook one more minute and transfer to plate covered with paper towels.
Serve with soy sauce or wasabi paste.
Variations
Marinated Panko Fried Shrimp
Marinate shrimp in teriyaki sauce for 1 hour prior to rolling in panko flake mixture.
Sesame Seed Fried Shrimp
Use panko fried shrimp recipe above. Place a bowl of sesame seeds next to bowl of panko flake mixture. Alternately, use gomasio (a Japanese seasoning of sesame seeds, seaweed and sea salt) for a slightly saltier taste. Dip shrimp into panko flake mixture, then into sesame seeds before cooking.
Grated Lemon Fried Shrimp
Use panko flake shrimp recipe above. Add ¼ teaspoon of lemon zest to mixture.
Grated Orange Fried Shrimp
Use panko flake shrimp recipe above. Add ¼ teaspoon orange zest to mixture. For a little more punch, substitute 1 tablespoon soy sauce for part of the water.
Peanut Sauce Fried Shrimp
Use panko flake recipe above. Substitute peanut sauce for two of the tablespoons water or milk.
Coconut Fried Shrimp
Use panko flake shrimp recipe above, add 2 teaspoons of sugar to mixture. Place a bowl of ½ cup shredded coconut next to the bowl of panko flake mixture. Dip shrimp in the panko flake mixture, then dip in the coconut prior to cooking.
