Sound dull? Hardly. Try shrimp salad Rémoulade, Baja shrimp salad or mint julep shrimp salad. Add some fresh dill, cucumbers or pickle relish to our basic, Easy Shrimp Salad Recipe (below) and transform your creation into a summertime treat. Add chopped boiled eggs for a simple dish perfect for a light lunchtime meal.

Since you'll probably deal with mayonnaise, raw eggs, or some other very perishable ingredient, the most important rule is to keep your ingredients chilled to prevent harmful bacteria from growing.

Potentially, bacteria can form in food that's left at room temperature (actually anything higher than about 40 degrees Fahrenheit) for more than about a half-hour.
So play it safe and keep your ingredients chilled until you're ready to make your salad.
Once made, be sure to put your salad back into the refrigerator. Let it chill for at least an hour before serving. Why? Besides further preventing bacteria growth, you'll allow the flavors to meld, making your salad your own unique creation.
Going on a picnic? We thought so! Shrimp salad IS picnic and potluck food. And why not? What picnicker could pass up an enticing bowl of shrimp salad topped with cucumbers or mint, amidst all the bowls of potato salad and Jello molds?
But if you are planning on serving at an outdoor gathering, be sure to keep your salad in a cooler as long as possible before serving. Even keep it on ice, if you can.
Bottled Mayonnaise: Your Friend
One more picnic tip: Use bottled mayonnaise. If you're talented enough to make your own mayo, shrimp salad for picnics is not the moment to show off your skills.
Bottled Mayo or other binding ingredients have preservatives to, well, preserve them. And much longer than homemade mayo. Those preservatives also help stave off bacteria once you open the jar.
Recipes
Easy Shrimp Salad Recipe (basic shrimp salad)
1 lb small shrimp, cooked and finely chopped (50 or more per pound)
½ cup celery, chopped
¼ to ½ cup mayonnaise
¼ teaspoon celery seed
1 teaspoon lemon juice
Salt and pepper to taste
Combine all ingredients in a bowl. Refrigerate for our hour before serving.
Serving suggestions
Serve on a bed of mixed lettuce greens with avocado and tomato wedges. Sprinkle with slivered almonds.
Serve as a sandwich spread, spread on toast rounds, or in lettuce wraps.
Variations
Egg and Shrimp Salad Recipe
Use basic, Easy Shrimp Salad Recipe. Chop up 4 hard-boiled eggs, add to salad, increase mayonnaise by ¼ cup.
Baja Shrimp Salad
Use basic, Easy Shrimp Salad Recipe. Omit celery and celery seed. Add ½ cup chopped cucumber, ¼ cup fresh cilantro, roughly chopped. Substitute lime juice for lemon juice. Serve on mixed greens with tortilla chips.
Summertime Shrimp Salad Recipe
Use Basic Shrimp Salad Recipe. Add 1 tablespoon fresh dill or 1 tablespoon pickle relish, finely chopped, and ½ cup cucumber, chopped, or 1 pickle, finely chopped.
Shrimp Salad Rémoulade Recipe
Use Basic Shrimp Salad Recipe. Add 1 tablespoon Dijon mustard and 2 tablespoons capers.
Cajun Shrimp Salad Recipe
Use basic, Easy Shrimp Salad Recipe. Omit celery seed. Add 2 tablespoons horseradish and ¼ teaspoon Tabasco sauce.
Italian-American Picnic Shrimp Salad
Use Basic Shrimp Salad Recipe. Omit celery seed. Add 2 tablespoons fresh basil, chopped, one garlic clove, finely minced.
Mint Julep Shrimp Salad
Use Basic Shrimp Salad Recipe. Omit celery and celery seed. Add ½ cup finely chopped cucumber and 2 tablespoons fresh mint, minced.
Tropical Shrimp Salad
Use Basic Recipe. Omit celery and celery seed. Add ½ cup cucumber, finely chopped. Substitute lime juice for lemon juice. Serve on a bed of mixed greens with mango slices and sprinkled with shredded coconut and macadamia nuts.
Mediterranean Shrimp Salad
Use Basic Recipe. Omit celery seed. Add ¼ cup chopped kalamata olives or olive tampenade. Serve on mixed greens, top with crumbled feta cheese.
