My dad used to make this. I added the garlic (because I add garlic to everything). Enjoy!
2 cups canned clams, minced
2 cups potatoes, chopped or grated
4 tablespoons butter
½ cup yellow onion, chopped
1 or 2 cloves garlic, minced
In a bowl, mix thoroughly together the clams, potatoes, onions and garlic. In a skillet over medium heat, melt two tablespoons of the butter, and when it is evenly spread and stops foaming, pour in the clams mixture. Flatten out with a spatula or a plate or pie-tin and let cook on one side until golden, about 10 minutes. When ready, gently lift with the spatula or flip out onto a plate. Use remaining butter to re-butter pan, and cook remaining side of hash until golden. Serve warm. Lift with large spatula, or turn out onto plate. Re-butter plan with remaining butter and turn over hash and cook remaining side for 10 minutes or until golden brown. Serve warm.
